I made pink marshmallows Tuesday night - cooked the sugar too long -- but the bonus was that the marshmallows cut very easy with little duck cookie cutters (I didn't have chick cutters). So, I rolled my mistake in sugar, and everyone at work loved them.
Yours are what I had hoped mine would be.
I look forward to trying your recipe.
What did you use to 'glue' the two chick sides together?

such cute little peeps!! i made peeps today, too, however i just cut shapes out of a sheetpan of marshmallow then dredged in the sugar. i can't wait until your new book comes out. hope you're doing well anita! you're due for a visit to philly this time!

They look so cute!!!! My favorite is the one hatching from his little chocolate egg!
I was wondering if you could take 5 minutes to explain why some marshmallow recipes have egg whites and others don't,and/or how it affects their texture. (I am an amateur and very curious!)

I really like your recipe for marshmallows because it has egg whites and no weird sugar syrups (the ones I have are lacking the whites or have hard to get ingredients like glucose syrup). I do have one question. I've made this recipe twice, and both times it just seemed like too much gelatin. Is 4 Tablespoons the correct amount? Both times I found it impossible to bloom all 4 Tbs in 3/4 cups of water, and the marshmallows seemed a little tougher/rubber-y. I love your idea of molding the marshmallows... so cute! Thanks!
